Equipment capacity
Batch processing of ice cream mixes with a capacity of 600 l/h.
Principle of operation
The unit covers all parts of the preparation process:
- high shear mixing
- high pressure homogenization
- heath recovery
- pasteurization
- cooling
- delivery to aging tanks
Water / milk is added to the tanks through the regeneration system at 50/55°C, than the powder
ingredients are added through the high shear mixer to allow a quick and complete rehidratation.
Other ingredients are added, and the mix is heated to the pasteurization det point, adjustable
between 65 and 85 degrees. Holding time is performed in the tanks. Once the mix completed the
pasteurization process, is pumped to the high pressure homogenizer where the dimension of fat globules is dramatically reduced and a smooth and homogeneous mix is obtained. After homogeneization, the mix is quickly cooled through the heath echanger and delivered to the ageing tanks at +4°C.
Adjustable parameters
The following production parameters can be easily adjusted during production:
- mixing temperature
- pasteurization temperature
- homogenization pressure 1st and 2nd stage
Heath recovery ECO
A specially designed 3 stages PHE allows hot mixes to be cooled by milk or water inlet. The milk / water entering at +4/+14°C in the plate is heated by hot mix up to 55°C. This system allows a recovery up to 28,80 Kw energy per batch.
Calculated on a typical 8-hour per day production on 250 days, give up to 57 600 kw in one year .
