The ARGOS S-line range is equipped with a modern programming system that allows the ice cream maker to adapt the machine’s functions to his needs, saving the settings in different
programs. Some models are also available with simple mechanical controls “M” version.
The standard programs of the ARGOS series are:
1. High pasteurization +85°C
Heating to 85°C, rapid cooling to +4°C and subsequent refinement with constant temperature control. It is the most used pasteurization cycle, for the maximum reduction of the bacterial load.
2. Low pasteurization +65°C
Heating to +65°C, paused for 30 minutes and rapid cooling to +4°C, with subsequent refinement.
It is a delicate pasteurization cycle, suitable for egg-free mixtures and which allows the organoleptic characteristics of fresh ingredients to be preserved to the maximum.
3. Maturation of the mixture at a constant temperature of 4°C
With gentle intermittent mixing.
