SCOPE OF THE EQUIPMENT
Processing of ice cream mixes, available in 3 models with capacities of 300/600/1200 l/h.
Operating principle
Fully automatic operation. The unit covers all parts of the preparation process:
high shear mixing
high pressure homogenization
heat recovery
pasteurization
cooling
transfer of mix to maturation vats
Water/milk is added to the tanks through the ECO regeneration system at 50/55°C, then the powdered ingredients are added through the high shear mixer to allow rapid and complete rehydration.
Other ingredients are added and the mix is heated to the pasteurization point, adjustable
between 65 and 85 degrees. The residence time is performed in the tanks. Once the mix is completed, the pasteurization process, it is pumped to the high pressure homogenizer where the size of the fat is micronized and the globules are drastically reduced and a smooth and homogeneous mixture is obtained. After homogenization, the mixture is rapidly cooled through the heat exchanger and sent to maturation in the vats at +4°C.
